Location: 2412 Nicollet Avenue, Minneapolis, MN, 55404

PURPOSE: To oversee production of the commissary for efficiency and volume, to ensure quality of Wedge-made food, and to supervise commissary staff in order to meet objectives for sales, margin, and labor.

REPORTS TO: Culinary Operations Director

SUPERVISES: Kitchen Supervisor, Receiver, Food-trak Coordinator, Shift Leads, Commissary Staff

• Kitchen operations – oversee kitchen operations and supervise staff
• Hiring – oversee recruitment and hiring of commissary staff.
• Staff development – coach, counsel evaluate and develop staff; provide performance management as necessary.
• Staff training – oversee on the job training for kitchen staff.
• Policies – Wedge and department policies with kitchen staff.
• Systems – evaluate current and develop new food production systems for maxium food quality and output
• Food quality – oversee production of commissary orders for quality and consistency of food and on-time delivery.
• Menu changes/seasonality – work with product development chef and culinary director to ensure staff is trained on making new and seasonal food items
• Food safety – nsure Health Department regulations are followed for all aspects of food production. Coordinate and ensure regular cleaning schedule for kitchen.
• Organics – maintain the integrity of the commissary's organic certification.
• Maintenance – ensure that department equipment is in good working order.
• Culture – Present oneself as approachable and maintain a friendly environment and positive culture.
• Budget – Maintain operating budgets and inventory within set goals.

* Management & supervisory experience of commissary/deli/kitchen staff
* Experience cooking for high volume restaurant, food service, caterer or deli
* Strong communication skills, both written and verbal.
* Ability to clearly explain procedures and processes
* Attention to detail & organization skills
* Ability to project an outgoing, friendly image
* Demonstrated ability to handle multiple demands
* Familiarity with natural foods

* Ability to work standing for long periods of time
* Fine motor skills
* Ability to lift 60 lbs. occasionally.
* Ability to climb ladders
